Baigani ( Eggplant fritters )

Baigani is an brinjal/eggplant fritter..its a famous tea time snack and also used as a side dish...To those,who dont think baigan/brinjal as  tastiest of vegetables, they must try this out....



Ingredients:

Baingan/Eggplant/Brinjal - 1 large
Gram flour/Besan- 4 tbsp
Cornflour - 1 tbsp
Coriander-cumin powder - 2 tsp
Red chilli powder - 1 tsp
Baking Soda - a pinch
Salt to taste
Turemeric  Powder
Oil for deep frying

Method

Slice the eggplant into circles ( 4-5 mm thick ).
Add salt, turmeric powder. Rub it all over the eggplant slices.
Keep aside for 10-15 mins.
Mix the gram flour and cornflour with all the remaining spices and a little bit of salt.
Add water to prepare a batter of medium thick consistency.
Heat the oil in a kadai.
Dip each eggplant piece into the prepared batter.
Shake off any excess and slip into the hot oil.
Fry on both sides till golden brown.
Remove from the kadai and put on paper towel ( or one can use a newspaper which works equally good ).
Serve hot with tomato sauce,chilli sauce or ny chutney of ur choice..or u can simply have it with ur tea...

    baigani , I had forgotten the word until I reached Athgarh in February. The guy selling baigani in front of the school, at 3 paisa per piece is long dead...but his son is doing good business with Baigani, pakodi, Bara and can you believe, he also gives noodles with soya sauce also.
    I will try your version line by line tomorrow.
