Aloo Dum is an easy Indian food recipe prepared with baby potatoes that are simmered in a curd based sauce and spiced with garam masala.
Ingredients
Potatoes- 200 gm
Baby potatoes will be better..
onion - 2 medium sized
tomato - 1 medium
ginger - 1/2''
garlic flakes - 5-6
thick curd - 1 tbsp
garam masala - 1/4 tsp
cumin powder - 1/3 tsp
coriander powder - 1/4 tsp
red chilli powder - 1/3 tsp
green chilli - 1
salt, turmeric, oil for deep frying.
Method
Boil the potatoes for 10 mins . Keep aside to cool. Peel the potatoes and prick all over with a fork.
Heat oil in a wok. Fry the baby potatoes till they turn golden brown.
Remove from wok and keep aside.Cut 1 onion and tomato into large chunks.
Make a smooth paste of onions, tomatoes, garlic and ginger in a grinder along with the green chillis.
Heat oil in the wok. Add chopped onion. Fry till lightly brown.
Add the turmeric, cumin powder , coriander powder and red chilli powder.
Add the ground paste and salt, and fry for few mins.
Add 1/2 cup water along with garam masala, beaten curd and fried potatoes.
Allow to boil for a few min or till most of the water evaporates.
Serve with rice/rotis/pooris
